Ingredients:
- 1 brinjal (baingan)
- 1 tsp salt
- ½ tbsp olive oil
- Spice mix
- ¼ tsp ginger powder
- 1 tsp turmeric powder
- ¼ tsp coriander powder
- ½ tsp cumin powder
- ½ tsp ground black pepper
- ½ tsp garam masala
- ¼ tsp dried red chili flakes
Method:
- Cut the baingan crosswise into 1-inch slices. Sprinkle each slice with a little salt and set aside for 15 minutes.
- Meanwhile, mix together the spices.
- Pour the olive oil into a large skillet over medium heat. Wipe the salt off from the slices and add them, cut side down, to the skillet. Cook for 15 minutes.
- Turn the slices over and sprinkle each slice with the spice mix. Cook for 7-10 minutes.
- Transfer the slices to a plate, sprinkle with a little more of the spice mix.
