- Kale/ rocket leaves / lettuce – ½ cup
- Watermelon – ½ cup
- Boiled chicken – 2 tbsp or paneer/tofu cubes- 50gms
- Salt and pepper as per taste
- Lime juice – 1 tsp
- Olive oil – 2 tsp
- Flaxseeds (optional) – ¼ tsp
- In a bowl- add watermelon, kale, chicken or paneer/tofu and flax seeds.
- Make a dressing of olive oil, salt, pepper and lime. Pour the dressing over the salad and toss well. Serve cold.
