Beans Lauki Soup


  • 1 tbsp oil
  • Half tbsp grated ginger
  • 1 spring onion whites
  • ¼ cup french beans
  • ¼ cup chopped lauki
  • Salt
  • Pinch of haldi
  • Half tsp jeera
  • Grounded black pepper


  • Heat the olive oil in a pan.
  • Add the onion, ginger and jeera sauteing until softened about 5-6 minutes.
  • Add beans, lauki and 1 glass of water, bring to a simmer and cook steadily until the beans and lauki are very tender, about 7-8 minutes.
  • Puree the soup with an immersion blender or in a food processor. Return the soup to a simmer and stir about 4-5 minutes.
  • Season to taste with salt and pepper.
  • Serve hot.
