Baked Sunnies

Ingredients:

  • ½ no avocado
  • 2 cloves garlic minced
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • 1 no egg
  • 2 tbsp. chopped fresh herbs (coriander/ dill/ parsley etc.)

Method

  • Preheat oven to 425 degrees F.
  • Place avocado on baking tray, break one egg into it- top with chopped fresh herbs, chili powder, salt, pepper and oregano- bake at 150 for 15 minutes until set.
