Energy Boosting Soup

Ingredients:

  • 1 medium – potato
  • 2 slices – chopped beetroot
  • 2 inch – lauki
  • 2 pinch – jeera
  • ¼ inch – ginger
  • 1 tsp – soaked moong dal
  • 1 pinch – pepper powder
  • 2 pinch – haldi
  • 1 tsp – coriander leaves
  • 3 to 4 – mint leaves (pudina)
  • ½ tsp – desi ghee
  • Salt for taste

Method:

  • Clean, wash the veggies and chop it. Add the vegetables & moong dal in the pressure cooker and cook it 3 whistles and grind it in mixer and strain through soup sieve.
  • Take a clean and dry pan add ghee and let it melt add 2 pinch of jeera, ginger – saute it well.
  • Add puree in pan. Add turmeric, black pepper powder, mint leaves and salt as per taste and let it boil.
  • Add coriander leaves to garnish soup.
  • Serve hot in soup bowl.
