Baingan Kachri


  • 1 brinjal (baingan)
  • 1 tsp salt
  • ½ tbsp olive oil
  • Spice mix
    • ¼ tsp ginger powder
    • 1 tsp turmeric powder
    • ¼ tsp coriander powder
    • ½ tsp cumin powder
    • ½ tsp ground black pepper
    • ½ tsp garam masala
    • ¼ tsp dried red chili flakes


  1. Cut the baingan crosswise into 1-inch slices. Sprinkle each slice with a little salt and set aside for 15 minutes.
  2. Meanwhile, mix together the spices.
  3. Pour the olive oil into a large skillet over medium heat. Wipe the salt off from the slices and add them, cut side down, to the skillet. Cook for 15 minutes.
  4. Turn the slices over and sprinkle each slice with the spice mix. Cook for 7-10 minutes.
  5. Transfer the slices to a plate, sprinkle with a little more of the spice mix.
